Tonight for dinner I decided to get a little fancy with my salmon. I took a stick of butter and put it in the food processor along with lemon juice, lemon zest, dill and parsley. I whipped it all together and then spooned into saran wrap then rolled it up to mimic a stick of butter and threw it in the fridge for a few hours. Compound butter…done! I lightly seasoned the salmon with salt and pepper and then cut a slice of the compound butter and laid it on top of the filet. I then baked the salmon for 12 minutes at 400 degrees. This was my first time making a compound butter, and I will definitely do it again. For a side, I split some brussel sprouts in half lengthwise and coated in olive oil, salt, and pepper and roasted for 25 minutes @ 400 degrees. You will see a lot of brussel sprouts on this page, they are my favorite vegetable especially roasted with bacon!
