Baked Sweet Potato & Apple

First of all, Happy St. Patricks day!  I know I should have done an Irish dish but I didn’t have any corned beef on the tugboat where I work :)

Want to switch up your typical side dishes for dinner?  Here is your chance with a sweet potato, honey, apple bake.  I guess you could call this a casserole, but I hate the word casserole.  It evokes memories of tuna noodle casseroles or other random items thrown into a pan with a can of creamed something or other and baked until mushy.  Dinner is served? Here we go:
Ingredients:
  1.  2 large sweet potatoes
  2. 1 granny smith apple
  3. 4T cinnamon
  4. 4T honey
  5. 4 T butter
  6. slivered almonds for garnish
Directions:
  1.  Preheat oven to 400ºF
  2.  peel and slice sweet potatoes about 1/4” thick
  3. core, slice apples about 1/4” thick
  4. layer sweet potatoes, honey, cinnamon and butter
  5. bake for 30-40 mins or until sweet potatoes are fork tender
  6. with 10 minutes left, add apples and almonds to the pan and mix everything
  7. Enjoy!
This makes for a great side dish for pork and chicken.  The sweet and savory mix is delicious.  If you have some leftovers throw them in a skillet and crisp them up and top with some almond butter, this is great for a snack or a breakfast option!
