Sweet Potato Jalapeño Poppers

Things have been poppin’ off here at WWJME.com.  I have been on a serious jalapeño popper kick.  I used to love them before I went Paleo so why not enjoy them now that I am Paleo?  The sweet potato in this popper compliments the jalapeño so well, you get the soft texture from boiling the potatoes which makes them easy to eat in a few bites without spilling all over the place.  Being surrounded by delicious crispy bacon the soft sweet potato absorbs a lot of the salty, smoky flavor.  You can prepare these the night before and throw them in the oven when you are ready for them.  These are perfect for a party or any night of the week!

  1.  6 jalapeños, sliced in half, de-seeded and de-veined
  2. 6 strips of bacon cut in half
  3. 1 medium sweet potato, peeled and cut into shapes that you think will fit into jalapeños
  4. 2 cups of water and 2T salt
  1. preheat oven to 400ºF
  2. bring 2 cups of salted water to a boil in a medium saucepan
  3. prepare icebath for potatoes (in a bowl add ice to water)
  4. add potatoes to boiling water
  5. once fork tender remove potatoes and place in ice bath
  6. let cool in ice bath then transfer to paper towels to absorb remaining water
  7. press potato pieces into jalapeños
  8. wrap in bacon
  9. cook until bacon is crispy, about 20-25 minutes
  10. Enjoy!
