Cappello’s Gnocchi

Part two of my Cappello’s samples.  I took the package of gnocchi out of the freezer and thawed it out on the fridge in the morning.  I wanted to do something different with this recipe.  No red sauce. No bolognese. I was going to do sage and brown butter, but it has been done 1 million times.  I had eaten a butter and mushroom gnocchi meal before in my pre-Paleo days so I figured I could handle that.  As the pot of water was boiling for the gnocchi, I made up the quick mushroom sauce.

Ingredients:

  • 1 package of Cappello’s Gnocchi
  • 5 oz. package of shitake mushrooms or whatever mushrooms you can find, pick one that is loaded with flavor and is hearty
  • 3/4 stick of grass-fed butter or ghee
  • 3 cloves garlic – chopped fine
  • 3 sprigs of fresh thyme or 2 Tbsp of dried thyme
  • 1 T crushed red pepper flakes
  • salt and pepper to taste

Directions:

  1. Boil 3-4 quarts of heavily salted water(should be as salty as sea water)
  2. In a saute pan, cook mushrooms down until they start to release their water
  3. once mushrooms have cooked down a bit, add butter, garlic, crushed red-pepper, thyme and cook until garlic is tender(a few mins). Remove from burner
  4. Drop gnocchi in boiling water and cook for 4-5 mins, stirring every 30 seconds until they float to the top(Package Instructions)
  5. put sauce mixture back on the heat and spoon gnocchi into pan and coat evenly, just remove gnocchi with slotted spoon some of the pasta water will help the sauce stick to the gnocchi
  6. cook until everything is warmed

This gnocchi was delicious!  I am a big fan.  It tastes like traditional gnocchi, and has the same texture.  I cooked up some hot italian sausage to go along with this dish.  You could basically serve it with any meat and it would be good.  The butter, mushrooms and thyme have such a great earthy flavor that will pair with any chicken, pork or beef!  I highly recommend these!

    Mmmm this looks delicious, I’ve been dying to get my hands on some Capello’s… might need to just bite the bullet and order some!
