Mango-Avocado Salsa

Who doesn’t love a fresh salsa in the summertime?  This Mango-Avocado salsa is perfect to beat the heat.  It is so fresh and delicious.  The sweetness from the mango, the creamy avocado, the crunchy bell pepper and the tanginess of the lime all blend so well together.  Pair this with some fresh fish or some chicken and you will have an amazing meal.

“John Mack, how come there isn’t cilantro in this salsa?” you ask.  I am not a huge fan of cilantro, I wanted this to be super bright and refreshing. If cilantro floats your boat throw some in and let me know how it goes!  Otherwise, enjoy this amazing salsa.

Ingredients:

  • 1 Mango – peeled and diced fine
  • 1/4 Red bell pepper – diced fine
  • 1/2 Avocado – diced fine
  • 2 Scallions – green part chopped fine
  • 1/2 Lime – juiced
  • salt and pepper to taste

Directions:

  • combine all ingredients and place in fridge for at least 30 minutes to let flavors develop
  • serve over fish, chicken, pork, beef or a spoon to shovel it into your mouth
